I've been reading a lot about figs lately, but, surprisingly, I've never tried one.
This summer I've really been struck by the fruit
fly bug. I can't get enough of fruit or salads, so I did some digging and I found a recipe that incorporated figs that I wanted to try. The only problem was I couldn't find any figs. It took a trip to 6 (yes, six!) different grocery stores to finally find some. After the third store, I voiced my frustration to my husband, to which he exclaimed "What the
fig is wrong with these grocery stores?!"...I thought it was cute. Maybe these figs weren't as fresh as their label implied, but they served their purpose.
Maple Balsamic Fig Salad with Goat Cheese Croquettes
Makes 1 serving.
2 cups loosely packed mixed greens
2 tbsp Maple Balsamic Vinaigrette
25 gms goat cheese
1 tsp olive oil
1 tbsp bread crumbs
3 walnuts, halved
3 figs, quartered
1. Preheat oven to 375. Form goat cheese into a patty, brush with olive oil and cover with bread crumbs. Place goat cheese patty and walnuts on a baking sheet and bake for 6 minutes.
2. Mix greens with vinaigrette. Top with figs, walnuts and goat cheese.
